In Spain, the olive tree is identified with life, health, and nobility, and olives and olive oil are an integral part of the national diet. Extra virgin olive oil is the olive's peak expression, both in its own colors, aromas, and flavors, as well as in its ability to bring out the aromas and flavors of other foods.
All Monva oils are made from the picual olive, known for its excellent antioxidant properties. Nourished by the mountain climate and the superb, rich red and ochre soils of the protected Sierra Mágina Denomination of Origin (D.O.), these olives yield oils with high oleic acid, polyphenol, and vitamin E content - appealing to the healthy gourmet in everyone.
Whatever the reason a recipe calls for quality olive oil, the extra virgin Monva range has it covered. Whether it's Valle Mágina stirred into Andalusian gazpacho, Dominus dressing a salad, or an irresistible potato omelette à la Montabes, these elegant oils provied a nutritious way to unlock latent flavor in any dish.

Dominus
This olive oil won the Alcuza prize for the best years
2006 and 2000 harvests extra virgin oil from the Sierra Mágina D.O., and came in second for the 2003-2004 season. As published in the article "Los Mejores Virgen Extra Españoles" ("The Best Spanish Extra Virgins" Restauradores, edition 18, February, 2004), the tasting panel of the magazine describes it as "deep yellow and olive green. In its enveloping aromas of young fruit, touches of fig leaf, tomato plant, and fresh grass are notable. It is very smooth on the palate, with distinct character, full-bodied, and a balanced bitter tang and fresh finish."
It's perfect for incorporating in baked dishes such as stuffed tomatoes. It also makes for tasty salad dressings where it plays a key role, as it does in any dish in which extra virgin oil is used to realize a dish's potential flavor.
Valle Mágina
Valle Mágina oil "displays a clear, brilliant, golden yellow color with glints of olive green. Its notes of fresh fruit reminiscent of apple and almond stand out. It has an initial sweet and unctuous texture, with moderate bitterness, a smooth follow-through, and a pleasing, rounded finish."
Used to season any type of uncooked food, turn to Valle Mágina when following recipes that call for quality oil. Great in summery gazpacho.
Montabes
Montabes is family-owned Monva's namesake extra virgin oil. The Sierra Mágina D.O. laboratory and tasting panel describe it as "a yellow/olive green color, with light fruitiness reminiscent of young olives. Lightly to very lightly bitter and astringent."
Montabes, with its unique taste, is a versatile oil that's particularly effective at extracting flavors from other ingredients.
A great Andalusian oil for the popular dishes of southern Spain including salmorejo and potato omelette.
